Green Smoothie

Serves 2 to 4

I’m a big fan of greens in my smoothies, because let’s be real: As much as I love kale salad, chomping through one can occasionally make you feel like a cow. Here, three types of greens are pureed with avocado for creaminess and enough sweet-tart pineapple and grapes to make you forget you’re basically drinking salad.

 
 

 

INGREDIENTS

1 cup packed stemmed hearty greens, such as kale, collards, or Swiss chard

2 cups packed mature spinach, stem bottoms trimmed

1/2 small bunch parsley

1 cup coconut water

1 large ripe Hass avocado, pitted

2 cups green grapes, frozen

1 cup pineapple chunks (about 1 inch)

Large handful mint leaves Juice of 1 lime

3 cups ice cubes

MAKE THE SMOOTHIE

Combine the greens, spinach, parsley, and coconut water in a blender and blend on high speed until as smooth as possible, about 1 minute. Scoop in the avocado flesh; add the grapes, pineapple, mint, lime juice, and then the ice; and blend on high speed until as smooth as possible, about 1 minute more. Serve right away.
